Designer’s Table, an experimentation of dinner in tableware and experience design

Designer's Table is an experimental research project in tableware design and dinner experience proposed by Studio Raphaël Lutz. The «tables d’hôtes» Designers' table is a serie of culinary events where 20 guests enjoy a total experience, tasting a menu created by young chefs in a tableware specially designed by the designer for each season. After two successful seasons of Designer's Table in 2017 and 2018, a third season is now in preparation and will take place in November and December 2019 with nine dates.

With Designer's Table, we celebrate sustainable high quality food, an experience of increased commensality, a questioning of how we feed ourselves, the production of local and artisanal objects as well as the use of quality regional and seasonal ingredients. We are convinced that this project, which is a research of the facts and gestures around shared dining, can bring answers to our food in the future but especially more developed experiences into the restaurants, meals and our gestures around food. This project brings us further in our act of eating and after each season we propose tableware - that has passed the proof of concept test - to our customers that are both chefs and tableware editors.

Raphaël Lutz is a product designer who graduated from ECAL in 2012. Great-grandson of one of the founders of the prestigious Ecole Hotelière de Lausanne, he grew up in the restaurant of his parents. Since opening his own design studio in 2012, he has worked on various projects such as scenographies, unique or serial object design, tableware and tableware concepts. In 2016, Raphaël Lutz founded Le LAB, an innovation lab dedicated to multidisciplinary experimentations through workshops, meetups and exchanges between creative people, companies and start-ups in order to produce innovative solutions and concepts. In 2018, Raphaël joined the editorial informative committee of Gault&Millau as a food design expert and researcher in dinner experience. In 2020, the Studio will open a think tank for food innovation in Lausanne in partnership with food actors from all over Switzerland. This will be a place where we will be able to test and experiment with design methods on solutions for a better future of eating.
